Yummy soup recipe

A healthy eating idea.

Suitable for Vegetariansvegetarian

This is a really low fat soup which can double as a pasta sauce

 

Ingredients List:

2 tins chopped tomatoes
1 red pepper, roughly chopped
1 yellow pepper,roughly chopped
1 courgette, chopped
broccoli, heads only
1 large onion, chopped
2-4 cloves garlic, chopped (depending on personal taste)

salt & lots of fresh ground pepper tabasco vegetable stock cube

Instructions:

Chop all the vegetables and place in a large saucepan. Add the 2 tins of tomatoes. Fill the two tins with water and add to the pan also. Add the stock cube.

Simmer for 30-40 mins, stirring occasionally. Add very little salt but lots of pepper. Use as much tabasco as you wish.

Blend and serve with fresh wholemeal bread.

To make a handy pasta sauce, don't blend as much leaving it a little thicker.
