Vegetable Chilli recipe

A healthy eating idea.

You might raise your eyebrows at the mention of chocolate in this recipe, but if you use very dark chocolate it hardly adds anything to the calorie count, but adds an amazing ammount to the final flavour of the chilli.

 

Ingredients List:

half cupful of green or puy lentils
tablespoon of olive oil
1 onion
2 courgettes/zuchinni
2 deseeded fresh chillis
2 cloves of garlic
half cup of oil free sun dried tomatoes
1 teaspoon ground coriander
1 teaspoon ground cumin
half teaspoon chilli powder
half a stick of cinnamon
2 tins tomatoes
4 cubes of dark chocolate with a high cocoa content (70% or more)
Salt and pepper to taste

Instructions:

Start the lentils cooking in a separate pan of water according to the packet instructions. Once cooked, drain and leave to one side.

Finely chop the onion and sweat gently in a large non stick pan until soft. Add the chopped garlic, chopped fresh red chilli and courgette/zuchinni and cook for a further 5 minutes. Then add the sun dried tomatoes and cooked lentils, followed by the dry spices. Stir the spices through the ingredients and add the tins of tomato. You may also want to add some water to ensure the mix doesn't dry out. Cover the pan with a lid and cook on a low simmer for 20 to 30 minutes. Add the chocolate around 5 minutes before the end of the simmering time and Season with salt and pepper to taste.

Serve with wholegrain rice, a dollop of low fat guacamole and a sprinkle of finely chopped spring onion.
