Tuna Nicoise recipe

A healthy eating idea.

A delicious quick and easy low fat salad.

 

Ingredients List:

Serves 2

A few handfuls of chopped crisp lettuce
A couple of handfuls of cherry tomatoes, halved
A handful of sliced cucumber
2 small ripe avocados, peeled and sliced
Small handful of pitted black olives
Can of tuna in spring water, drained
10 anchovy fillets, drained
Tablespoon of capers, drained and rinsed

Instructions:

Prepare all the salad and toss together with a low fat salad dressing in a large bowl. Divide the salad onto two plates and sprinkle over the tuna and capers and finally dress with a few of the achovy fillets.
