Serves 4
1 lb Ripe cherry tomatoes
Bunch of spring onions (scallions)
1 tbsp Olive Oil
Salt and freshly ground pepper
Remove the tomatoes from the fridge and allow them to warm up for a couple of hours before use. This helps to intensify their flavour.
Halve the cherry tomatoes and place in a bowl. Thinly slice the spring onions (scallions) and add to the tomatoes.
Add the olive oil, salt and pepper and toss together.
