A green bean salad accompanies barbeque dishes perfectly. Try this bean salad recipe with grilled sardines or chicken. Or have it as a light lunch by itself. You could also try beefing it up by adding chopped anchovies and/or olives.
Serves 4
1 tablespoon olive oil
1 large red onion, chopped
3 garlic cloves, sliced
Small pinch of dried red chillis
250 grams cherry tomatoes, halved
500 grams french beans
Handful of chopped fresh basil
Salt and pepper
Start by putting your french beans on to simmer for 5 mintutes. When cooked drain and rinse with cold water. Leave to one side.
Then, in a large frying pan add the olive oil and gently fry the onion, garlic and chillis until the onions have softened.
Next add the chopped tomatoes and beans and simmer gently for 5 mintues. Finally add the chopped basil and season to taste.
