This salad is a great accompaniment to barbequed foods.
Serves 4
1 lb large ripe tomatoes
Handful of fresh basil, chopped
1 tbsp Olive Oil
Pinch of salt and freshly ground pepper
Take the tomatoes out of the fridge a couple of hours before you want to make the salad. Allowing the tomatoes to warm up helps to intensify their flavour.
Thickly slice the tomatoes and place on a serving dish in a thin layer. Sprinkle the basil over the tomatoes and then drizzle over the olive oil. Season with salt and freshly ground black pepper.
