Serves 4
6 large tomatoes
Pinch cayenne pepper
Pinch of sugar
Pinch of salt
Skin the tomatoes by making a small slit in the skin and plunging into boiling water. Remove from the water and allow to cool before peeling off the skin.
Cut the tomatoes in half and remove the pips and fibres. Press the tomatoe flesh through a seive and mix with a good pinch of cayenne pepper, a pinch of salt and a pinch of sugar.
Pour this puree into four little glasses and leave in the refrigerator until thoroughly chilled.
