Another quick and easy low fat pasta dish.
Serves
150 grams whole grain pasta
1 tablespoon olive oil
3 large cloves of garlic, finely chopped
Pinch of dried red chilli
Large pinch of chopped fresh rosemary
3 large courgette/zuchinni, chopped into half inch pieces
Salt and pepper
1 dessertspoon grated parmesan cheese
Start cooking your pasta according to packet instructions.
In a separate non-stick pan, add the olive oil and gently fry the garlic, chilli and rosemary for a minute. Add the chopped courgette/zuchinni. Fry gently for around 8 minutes. Season with salt and freshly ground black pepper.
Drain the pasta and add to the courgette/zuchinni. Mix well and serve in pasta bowls with a spinkling of parmesan.
