This recipe for a rich tomato based homemade spaghetti sauce is virtually fat free. With italian food it is the pasta that is full of carbs. So try having smaller portions of spagetti and more of this sauce.
Serves 4
3 tablespoons olive oil
2 onions, chopped
2 cloves garlic crushed
4 tins of plum tomatoes
large handful of fresh basil leaves
pinch of oregano
half pinch of chilli powder
tiny pinch of salt
2 pinches of black pepper
First sweat the onion and garlic in olive oil for about 5 minutes in a deep sided saucepan on a very low heat. They are ready once the onions go translucent.
Chop up the tomatoes, stir then into the the pan, turn the heat up just a fraction and let them cook. Here is the big secret. The longer you cook the tomatoes the better they taste. A minimum of one hour is needed but two hours are preferable.
Only add the oregano and chilli to the sauce a minute or two before bringing off the heat and only add the basil one you have turned the flame off.
