Seafood Spaghetti recipe

A healthy eating idea.

A quick and easy low fat pasta dish that gives a delicious taste of the mediterranean.

 

Ingredients List:

Serves 2

150 grams of dry spaghetti (or linguine)
1 tablespoon of olive oil
3 cloves of garlic, finely chopped
A pinch of dried chilli flakes
150 ml white wine
4 large ripe tomatoes, peeled and finely chopped
A pinch of saffron
1 tsp of sugar
400 grams of mixed seafood (I like to use fresh seafood wherever possible but you can use frozen if none is available). My favourite combinations include; squid (cut into rings), clams, mussels, salmon (cut into largish chunks), prawns.
2 tablespoons of chopped flat leaf parsley

Instructions:

Put on a large pan of salted water for your spaghetti and bring to the boil. When boiling add your pasta and cook according to pack instructions.

Meanwhile make your seafood sauce. Heat the oil in a large flat pan and add the garlic and chilli flakes. Cook for a minute and then add the wine and allow to simmer for a couple of minutes.

Add the tomatoes, the pinch of saffron and teaspoon of sugar. Cook for a further couple of minutes. Then add your seafood to the pan. Cook over a medium heat for 3 to 4 minutes (make sure that each element of seafood is cooked before serving).

A minute or so before the end of the cooking time add the chopped parsley (retain a bit for garnishing the dish) and season to taste.

Drain the pasta and add to the cooked sauce. Toss together to make sure the pasta is well coated with the sauce. Serve in large pasta dishes and garnish with a sprinkle of chopped parsley.
