Salmon with olives and tomatoes recipe

A healthy eating idea.

This simple salmon recipe takes minutes to prepare and tastes great. The best thing about this dish is the delicious stock that tastes similar to the classic french bouillabaisse. I serve this with couscous so all the flavour gets absorbed into the grains.

 

Ingredients List:

Serves 2

2 salmon fillets
250 grams/9 oz cherry tomatoes, halved
10 pitted black olives
1 red chilli, deseeded and chopped finely
1 handful of tarragon, chopped
2 cloves of garlic, chopped
1 tablespoon of olive oil
1 cup of vegetable stock
1 teaspoon of sugar
Salt and pepper

Instructions:

In a small casserole dish, mix together the tomatoes, olives, chilli, tarragon and garlic along with the olive oil. Cover and leave to marinade for 30 minutes.

Add the salmon fillets to the mix and pour in the cup of vegetable stock and sprinkle over the teaspoon of sugar. Add a pinch of salt and some freshly ground black pepper. Cover with a lid or tinfoil and cook at 200c/400f/gas mark 6 for 25 minutes.

If you find the mix a little too runny, remove the lid the for last 10 minutes to allow the stock to reduce.
