Salmon with lemon and capers recipe

A healthy eating idea.

A lovely light main course which is delicious served with boiled new potatoes and steamed brocolli.

 

Ingredients List:

Serves 2

2 small salmon fillets (preferably organic)
1 large lemon, thinly sliced
A small handful of capers (rinsed of brine or salt)
Olive oil

Instructions:

Preheat the oven to around 200 degrees.

Place the salmon fillets in a oven proof dish and cover with the sliced lemon, capers and a slosh of olive oil. Season with a small amount of freshly ground salt and black pepper.

Cover the dish with aluminium foil and cook in the oven for 20 to 30 minutes.

Serve with new potatoes and steamed vegetables or a green salad.
