The wonderful yellow saffron may cost a small fortune, but a little goes a long way.
200g Fat Free Fromage Frais
5 basil leaves
10 stalks of chives
Tiny pinch of saffron threads
1 tablespoon of boiling water.
The chives and basil need to be very finely chopped and added to the fromage frais. Infuse the saffron in the boiling water for two minutes and then stir that in too. You might also want a drop of lemon juice, but be careful not to let this overpower the light saffron fragrance.
Serve as a dip with spears of baby raw vegetables.
