Rhubuarb is much underrated and is often passed over for better known fruit. However, once you've tried this rhubarb recipe I can guarantee you'll be coming back for more.
What is also really great about cooking with rhubarb is its fantastic colour. This rhubarb compote is a gorgeous pink that really brightens up a helping of plain yoghurt.
Serves 4 to 6
4 large sticks of rhubarb, cut into 1 inch pieces Zest and juice of 1 large orange One inch piece of fresh root ginger, grated 250 grams of fresh strawberries, halved 2 tablespoons of light brown sugar
Place all the ingredients into a pan, cover with a lid and bring to a simmer. Simmer gently for 5 minutes with the lid on and 5 with the lid off to reduce the liquid.
Remove from the heat and allow to cool before serving a large spoonful of compote with your favourite low fat plain yoghurt.
