
A healthy eating idea.
A great barbecue or steamed dish which works brilliantly with rice.
For 4 portions
1 red bell pepper 1 green pepper 8 tiger prawns 7 - 8 scallops (optional)
for the marinade:
100ml vegetable oil juice of half a lemon 1 tsp fresh thyme (chopped) 1 tsp fresh basil (chopped) 1 tsp fennel seeds (crushed) good twist of black pepper
Peel the prawns and chop the peppers into 2cm cubes. Thread prawns, scallops and peppers onto metal or wooden skewers.
Combine all other ingredients in a blender and pour over skewers. Allow to marinade for at least an hour before cooking over coals or in a steamer.
If you're barbecuing with wooden skewers a good trick is to soak them in water prior to skewering to make sure they don't burn over the coals.
