A light salad full of flavour and packed full of goodness. This salad is perfect on its own or as an accompaniment to barbecued lamb kebabs.
Makes 2 large portions
150 grams of baby salad leaves (rocket, watercress, spinach, lambs lettuce etc) 25 grams of fresh peas (or frozen peas - defrost before using) 1 handful of mint, finely chopped 100 grams of feta cheese Slosh of extra virgin olive oil Squeeze of fresh lemon juice Salt and freshly ground black pepper
First make a simple salad dressing by whisking together the olive oil, lemon juice, salt and black pepper.
Toss together the salad leaves, mint and peas in a bowl. Add the dressing and toss thoroughly. Crumble over the feta cheese and serve.
