Pea Salad recipe

A fresh salad that delivers a true taste of summer.

 

Ingredients List:

Serves 2

100 grams peas
4 sticks of celery, finely chopped
4 spring onions/scallions, finely chopped
Handful of cashew nuts
50 grams of crumbled feta cheese
A couple of sprigs of fresh mint, roughly chopped
1 dessertspoon of olive oil
Salt and pepper

Instructions:

Mix all the ingredients together in a bowl. Add the olive oil and season to taste with salt and pepper.
