Pea Crostini recipe

A healthy eating idea.

Suitable for Vegetariansvegetarian

This simple topping for toasted bread tastes amazing and can really only be made with fresh peas or broad beans. It is healthy and flavoursome and best of all is a true taste of summer.

 

Ingredients List:

80g peas or young broad beans
10 mint leaves
1 tablespoon olive oil
1 clove of garlic
2 slices of toasted fresh bread
1 small pinch of salt.

Instructions:

Cut the garlic in half and rub it across the freshly toasted bread slices. Now crush together the peas and mint in a pestle and mortar, grinding them down to a rough paste. Mix in the olive oil and salt and then spread as a thick paste on top of the toast. Serve with a small green salad with lemon juice.
