Half a honeydew or gala melon 250ml guava juice Juice of half a lemon 1 tablespoon of honey A large bunch (approx 30 leaves) of mint 2 handfuls of ice cubes
Muddle the mint leaves (to 'muddle' is a bartenders way of saying pound them in a pestle and mortar for a bit) and add to the lemon juice and honey. Crush the ice and pour the lemon/mint mix over the top Place this mix in serving glases. Now finely dice the melon and place together with the guava juice in a bowl. Pour this over the ice and serve.
