
A healthy eating idea.
This came from Chris and Nic's recipe pages. I liked the suggestion of using dried pasta rather than fresh, since the fresh pasta has eggs in it, which makes the calorie count and cholesterol levels rise. This recipe serves two people.
Set the pasta on the hob with water according to the instructions on the packet 150g of cooked pasta is a good ammount. While it is cooking, peel two cloves of garlic and crush them a bit with the side of a heavy knife. Fry the flattened garlic in a dessertspoon of olive oil for about 3 minutes on a very low heat.
Remove garlic from pan and turn the heat up to full. Now sear the outside of the scallops which takes about 30 seconds each side. Add the juice of half a lemon and the fish stock.
Add a pinch of chili powder and two pinches of paprika. stir for a minute more and then drain and add the pasta which should now be cooked.
Sprinkle with chopped parsley and serve with a further wedge of lemon.
