People worry that avocados are high in fat, but medical advice is now that avocado fat is actually beneficial for lowering cholesterol. The reason is that avocado is a great source of monounsaturated fat which may actually help to raise our levels of HDL ("good" cholesterol) which protects arteries, while lowering levels of LDL ("bad" cholesterol).
2 large Avocados
Juice of one lime
Flesh of one tomato, cubed
200g low fat creme fraiche
1 shallot (finely minced)
1 chilli pepper (finely minced)
To create an amazing low fat Guacamole, simply place all the ingredients in a bowl and mash with a fork to the required consistency. The trick to perfect guacamole is to only use good quality, ripe avocados.
