Bananas can provide a comparatively low-fat bulking ingredient that makes for heavenly cheesecake that is much less worrying for the waistline than traditional methods.
4 bananas 750g ricotta cheese 100g caster sugar 2 tbsp cornflour 3 egg whites 2 pieces of stem ginger in syrup 75g sultanas
Firstly peel, chop and smoosh the bananas in a bowl. Finely chop the stem ginger and add to the bananas. Set this to one side for 15 minutes before adding the sugar, ricotta cheese and cornflour and mixing well. Add the sultanas and mix again. In a clean bowl whip the eggs whites into stiff peaks and then gently fold into the rest of the mixture with a metal spoon. Bake in a 9inch tin at 200C/400F/Gas 6 for 40 minutes. Allow to cool before serving.
