Suitable for Vegetarians
A very low fat soup which tastes fantastic and has real 'Winter Warmer' appeal for the whole family.
5 Large Carrots
1 tbsp Olive Oil
1 Onion
15g Root Ginger
½ teaspoon of cinnamon powder
½ teaspoon of chilli powder
1½ Pints Vegetable Stock
1½ Pints hot Water from the kettle
1 tsp Black Pepper
Put the oil in a deep pan on the hob and over a low to medium heat soften the chopped onions. After 4 minutes add the chopped carrots & grated ginger. After a further 5 minutes add the rest of the ingredients (except for the black pepper)and cook for at least half an hour till the carrots are nice and soft. Now carefully transfer the soup to a blender and whizz it till smooth. Return to the hob if necessary to bring the heat back up and add fresh black pepper before serving. It is wonderfully rich and filling and is about as low fat as a recipe can get.
