
A healthy eating idea.
Lean lamb with an amazing yogurt and mint marinade really adds up to a very cool meal. It tastes so good it shouldn't really be considered as a 'healthy option' but it is.
1 lb lean lamb (leg) cut into 1/4 inch slices
250ml very low fat natural yogurt
large handful chopped mint
half a lemon
1 teaspoon groundnut oil
Take half the yogurt and add the chopped mint and lemon juice and oil. Mix well and season.
Marinade the lamb for at least an hour before cooking in a pan.
Prepare the rest of the yogurt with more chopped mint and lemon as a dressing for a fresh green salad to accompany the lamb.
