This is a fantastic soup. Don't feel bad about using miso stock cubes. Even the japanese do it. Life is too short to ferment your own soya beans.
50g fresh mushrooms
10g shitake mushrooms
1 miso cube and water
1 tbsp. soy sauce
handful of snow peas
1 thinly sliced carrots
2 thinly sliced spring onions
handful of baby spinach leaves or Pak Choi
2cm grated ginger.
Here's a recipe that is simplicity itself. Make up the miso according to the instructions on the box. All the other ingredients should be added and cooked very gently for about 4 minutes or less. The idea is to have the freshest of natural flavours rather than a mushy mess.
