2 large potatoes A drizzle of olive oil A pinch of crushed sea salt 200 grams of undyed smoked haddock 150 ml of skimmed milk 1 tablespoon of low fat creme fraiche 2 tablespoons of chopped chives
How to cook Jacket Potatoes with Smoked Haddock and Chives
Prepare your jacket potatoes by washing, drying and then rubbing them with a few drops of oil and a pinch of the crushed sea salt. Skewer each with a metal skewer and bake in the middle of a preheated oven (gas mark 5/190 degrees centigrade) for 1 3/4 to 2 hours. Or until the skin is good and crispy.
When your potatoes are close to being cooked. Poach your haddock in the milk, along with a pinch of salt and ground pepper, for 6 to 8 minutes.
Remove the haddock from the milk and place the flakes of cooked fish in a bowl. Take the potatoes out of the oven, remove the skewer and cut in half. Scoop the cooked potato out of the skin and place in the bowl with the haddock.
Stir in the tablespon of creme fraiche, a splash of the milk the haddock was cooked in and the chopped chives. Mix together and season with salt and pepper. Fill the potato skins and serve with a crisp green salad.
