Our guide to cooking the perfect Jacket Potato
Jacket potatoes taste so good and are an excellent healthy alternative to roast potatoes and chips.
Cooking jacket potatoes also means you keep all the vitamin C which is stored just below their skins. This essential vitamin is lost in peeling.
Jacket potatoes also make a healthy lunch dish which can be paired with any number of delicious fillings and salad.
This cooking methods gives fluffy insides and crispy outsides every time.
Serves 2
2 large potatoes (Maris Piper or Desirée varieties are ideal) 1 desertspoon of olive oil 1 pinch of crushed sea salt
Jacket Potato Cooking Method
Pre-heat the oven to Gas Mark 5 (190 degrees centigrade, 375 degrees farenhite).
Give the potatoes a quick wash and scrub and dry with a piece of kitchen towel.
Rub the outside of each of the potatoes with few drops of olive oil and then rub in the sea salt.
Next skewer each of the potatoes (like you would a kebab). Make sure you use a metal skewer as this helps transfer heat to the middle ensuring the fluffy well cooked centre.
Place the skewered potatoes on a shelf in the middle of the oven and cook for 1 3/4 to 2 hours. The potatoes are done when the skins are really crispy.
To serve, remove them from the oven and gently pull out the skewers. Slit the potato in half, fluff the centre with a fork and drizzle over some olive oil and season with salt and freshly ground black pepper.
