The combination of smooth low fat turkey and the intense fragrant hit of basil in this recipe is a real winner.
4 turkey breast steaks
1 tablespoon pesto
1 teaspoon olive oil
2 tomatoes
2 red peppers
half a cucumber
1 clove of garlic
2 tablespoons olive oil for the dressing
1 tablesppon of red wine vinegar<
The turkey breasts are to be flattened and then very lighly spread with pesto on one side and tightly rolled into a sausage. This is then sliced into rings which are grilled on both sides. It is best to skewer them to stop the rings unravelling unravelling.
Once cooked, serve with a salsa made from the rest of the ingredients lighty whizzed together in a blender.
