
A healthy eating idea.
This healthy recipe is one I've picked up from trips to the mediterranean. It reminds me of sitting in beach front cafes eating ultra fresh fish after enjoying a day of sun, sea and sand.
This is also a good alternative to serve at barbecues instead of the usual steaks and sausages.
Serves 2
6 fresh sardines, gutted Salt and freshly ground black pepper
For the tomato salsa
500 grams of cherry tomatoes or baby plum tomatoes, cut into quarters 1 small red onion, chopped finely A small handfull of coriander (cilantro), chopped Half a red chilli, deseeded and finely chopped (optional) 1 tablespoon of olive oil 1 desertspoon of white wine vinegar Pinch of salt and freshly ground pepper
Start by making the tomato salsa. Place all the chopped ingredients into a bowl and mix well. Then mix together the oil, white wine vinegar and seasoning to make a simple vinegarette. Pour over the vegetables and mix well. Your salsa is now ready.
Once that's done you need to grill the sardines. This can be done on the barbecue, under a grill or in a griddle pan.
Season the fish with a little salt and pepper. Then make sure the grill is nice and hot before grilling the sardines for a few of minutes either side until cooked.
Plate up the sardines and salsa and serve with a squeeze of lemon.
