A light tasty soup which is perfect for a summer lunch.
Serves 2
1 tablespoon of olive oil
1 large onion
2 cloves of garlic, finely chopped
1 sprig of fresh thyme
1 courgette (zuchinni), cubed
1 cup of peas, frozen or fresh
1 large handful of fresh spinach
3/4 pint of chicken or vegetable stock
Salt and freshly ground pepper
Heat the oil in a large saucepan and add the onion, garlic and thyme. Gently cook until the onion is soft.
Add the courgette, peas and spinach and cook for a further couple of minutes and then add the stock. Cover with a lid and simmer gently for 10 minutes.
When cooked, remove from the heat and liquidise until smooth. Serve in large soup bowls.
