This fennel soup recipe is perfect as a dinner party starter. It has a light and refreshing taste which also make it an ideal summer dish.
Serves 4
1 tablespoon of olive oil
1 large onion, chopped
2 cloves of garlic, chopped
5 bulbs of fennel, sliced and diced
A cup of water
Small handful of dill, chopped
1 tablespoon of low fat creme fraiche
Salt and pepper
In a large pan, sweat the onions and garlic in the olive oil. Then add the chopped fennel and cook over a low heat for 5 minutes.
Add the water and cover with a lid, leave to simmer for 20 minutes.
Finally add the chopped dill, the creme fraiche and then blend all the ingredients together. Season to taste with salt and pepper before serving.
