The delicious aniseed flavour of the fennel makes this a refreshing and tasty salad. Serve as a side during the summer with barbequed fish.
Serves 4
2 large fennel bulbs
2 carrots, peeled
12 radish
1 apple
For the dressing
Juice of half a lemon
2 tablespoons of olive oil
1 tablespoons white wine vinegar
1 crushed small clove of garlic
Salt and freshly ground balck pepper
Thinly slice all your vegetables and place in a large bowl.
In another bowl mix together the ingredients for the dressing. When combined pour over the vegetables.
Mix well and serve as a side dish.
