Slightly north african, totally delicious
2 medium eggplants (aubergines)
1 teaspoon olive oil
1 clove garlic minced
pinch of cayanne pepper
salt
pepper
Prick the eggplants with a fork and then microwave for 2 minutes until they collapse, or cook for half an hour in a conventional oven.
Mash with the oil and garlic to make a smooth paste. Once this has cooled, add the low fat cream cheese and salt and pepper to make a deliciously light pate which has a great smoky flavour and works superbly as a sophisticated dinner party snack.
