
A healthy eating idea.
A very simple crab salad and a real winner for summertime dinner parties.
Serves 2
300 - 400 grams of white crab meat 1 large mango, peeled and sliced A couple of handfuls of rocket 3 spring onions, thinly sliced
For the salad dressing
1 tablespoon of olive oil Juice of one lime 1 small red chilli, deseeded and finely chopped Salt and pepper
First of all arrange a handful of rocket on each plate. Then arrange the slices of mango on top of this. Then sprinkle over the crab meat and sliced spring onion.
Make the dressing by whisking together the oil, lime juice, chilli and a pinch of salt and pepper.
Pour the dressing over the salad and enjoy.
