Courgette and Prawn Linguine recipe

A healthy eating idea.

A quick and easy summer pasta recipe.

 

Ingredients List:

Serves 4

1 tablepoon of olive oil
1 garlic clove, chopped
1 pinch of dried chilli flakes
3 medium courgettes, halved lengthways and thinly sliced
400g cooked peeled prawns
200g cherry tomatoes, cut in half
A handful of fresh basil, roughly chopped
400g linguine, cooked according to packet instructions

Instructions:

Whilst making the sauce, put on a large pan of water to boil and cook the pasta according to packet instructions. The sauce and the pasta should then be ready at around the same time.

Heat the oil in a large deep pan, add a pinch of chilli and the sliced courgettes. Fry gently until they start to take on a golden colour. This will take around 5 minutes.

Next add the garlic and cook for a minute or so and then add the chopped tomatoes. Cook for a further couple of minutes and then add the prawns and handful of chopped basil. Cook for a further 5 minutes and add seasoning to taste.

When your sauce is ready, drain the cooked pasta and add to the sauce. Toss together well to make sure the pasta is well coated with the sauce.

Serve with a green side salad.
