Pesto pasta is an easy meal to make in minutes. This pesto pasta recipe also uses courgettes (zuchinnis) for extra taste and texture.
Serves 4
4 large courgettes, thinly sliced lengthwise so you have ribbon like strips
2 cloves of garlic, chopped
1 tablespoon olive oil
Pinch of dried chilli flakes
Half a teaspoon chopped fresh rosemary
300 grams/12 oz tagliatelle pasta
2 tablespoons basil pesto
Start cooking the pasta according to packet instructions.
Whilst the pasta is cooking, add the oil to a large non-stick frying pan and place over a low to medium heat. Add the garlic, chilli flakes and rosemary and gently cook for 30 seconds.
Then add the courgette/zuchinni strips and cook until for until soft. The courgette should be soft but not mushy.
Drain the cooked pasta and add to the pan with the courgettes. Add the pesto and mix thoroughly. Check for seasoning and add salt and pepper to taste.
Serve in large bowl and garnish with a fresh basil leaf.
