The flavours in this courgette and mushroom soup compliment each other beautifully and give you a lovely fresh and light meal.
Serves 4
1 tablespoon of olive oil
1 large onion, chopped
3 cloves of garlic, chopped
Handfull of thyme
4 courgettes, chopped
A large handfull of mushrooms (any types will do), sliced
1/2 pint of vegetable stock (add more if you prefer a thinner soup)
1.5 tablespoons of low fat creme fraiche
In a large pan, sweat the onions, garlic and thyme together. Then add the chopped courgettes and mushrooms and cook for a further five minutes.
Add the stock, cover with a lid and simmer for 15 to 20 minutes.
At the end of the simmering time, blend together the ingredients, stir through the creme fraiche and season to taste before serving.
