Suitable for Vegetarians
This is lovely fresh salad that is great with barbequed fish.
Serves 4
1 1b fresh broad beans, still in their pods
2 large courgettes (zuchinnis)
1 tbsp olive oil
Squeeze of fresh lemon
salt and pepper
First pod the broad beans and drop into boiling water and then simmer for 3 minutes. Remove from the heat, drain and leave to cool. When cool enough to handle remover the outer grey skin to reveal the fresh green beans. Place these beans in a large shallow bowl.
Next prepare the courgette/zuchinni by first washing under the tap and then removing the ends. Then slice thinly length-wise, to give you long strips of courgette.
Add the courgette to the beans, drizzle over the olive oil, add a squeeze of fresh lemon, a pinch of salt and a good grind of black pepper. Mix together thoroughly and serve.
