A chocolate and courgette cake has to be one of my favourite ways of dealing with the glut of courgettes we get every year on our allotment. It’s easy to make, is deliciously moist and uses a mix of oil and low fat spread which is a great way of making it healthier for you.
Eat it plain or with a spoonful of crème fraiche sweetened with vanilla essence.
120g low fat spread 125ml sunflower oil 350 g golden caster sugar 3 large eggs, lightly beaten 130 ml milk 350 g plain flour 80 g unsweetened cocoa powder 2 tsps baking soda 1tsp baking powder 1tsp salt 1 tsp ground cinnamon 450 g grated courgettes 75 g dark chocolate (at least 70%), grated
Set the oven to 190ºC/350ºF.
Line a 20 x 35cm baking tray with baking paper.
Mix together the low fat spread, oil and sugar until you have a light and fluffy mixture. Gradually add the beaten eggs and then the milk until mixed thoroughly.
Sieve together the dry ingredients and fold into the mixture. Stir in the grated courgettes and chocolate and pour into the prepared tin.
Bake in the oven for 35 -45 minutes or until a knife or skewer inserted into the centre of the cake comes out clean.
