
A healthy eating idea.
Chilled summer soups are wonderful and none pleases me more than this lovely asparagus concoction.
400g Asparagus
10g Olive oil
1 small onion
1 clove of garlic
1 teaspoon flour
500ml chicken stock
200ml plain low fat yogurt
Small handful of fresh chives
Blance the asparagus spears in boiling water for 30 seconds. Gently fry the onion (finely chopped) in the oil and after 6 minutes finely chop and add the garlic. Two more minutes later, add the asparagus (roughly chopped) and stock. Simmer till the asparagus is soft (about 5 minutes) then remove from head and whizz it in a blender till smooth.
Chill in the refridgerator and just before serving add the yogurt. Garnish with finely chopped chives.
