Celeriac is a wonderful tasting root vegetable. This soup makes a brilliant starter as part of a dinner party. Your friends will think it's taken much more time and effort than it actually needs.
It's also very low in fat and will amaze your veggie friends.
1 tsp olive oil
1 large onion, chopped
2 cloves of garlic, sliced
1 celeriac, peeled and chopped
1 pint of vegetable stock
Tablespoon of chopped fresh tarragon
Salt and pepper
Add the olive oil to a large non-stick pan. Add the onions and garlic and sweat for around 10 minutes.
Then add the peeled and chopped celeriac and cook for around 5 minutes. Add the vegetable stock and simmer gently for around 20 minutes, or until the celeriac is cooked (it should be soft but not mushy).
5 minutes before the end of cooking add the chopped tarragon.
Once cooked blend the soup until smooth. Add salt and pepper to taste.
