Carrot and coriander soup recipe

A healthy eating idea.

Suitable for Vegetariansvegetarian

A light and sweet tasting soup delicately flavoured with coriander.

 

Ingredients List:

Serves 4

1 tablepoon olive oil
1 large onion, chopped
1 clove of garlic, chopped
450 g/1 lb carrots, peeled and sliced
1 tsp ground coriander(cilantro)
1.2 litres/2 pints of good vegetable stock
Large handful of fresh coriander, chopped
Salt and freshly ground pepper to taste

Instructions:

Heat the oil in a large saucepan and add the onion and garlic and fry gently. When the onion is soft add the carrots and cook gently for a minute. Add the ground coriander, cook for 30 seconds and then add the stock.

Allow to simmer gently for 10 to 15 minutes until the carrots have softened. Add the majority of the chopped coriander (retain some for garnish) and then blend the soup until smooth.

Add salt and pepper to taste and serve in large bowls with a sprinkling of chopped coriander.

A small amount of half fat creme fraiche could be added to the bowl at this point should you wish to have a creamier soup.
