Light and delicious, carrot mousse is a great starter for a dinner party.
Serves four
6 carrots
2 tablespoons vegetable stock
2 eggs
100g low fat soft cheese
large bunch of tarragon
Grate the carrots and cook with the stock in a lidded saucepan over a very low heat for 20 minutes. Allow it to cool for a few minutes before liquidising in a blender.
Beat the eggs and cream cheese together and add the carrot puree. Beat until thoroughly mixed before placing in small ramekins.
Place these in a ban marie (a roasting pan half filled with water) and cook in the oven until set (approx half an hour). This light mouse goes well with a little wholegrain toast or brown rice.
