This butternut squash soup recipe is extremely simple to make and has a delicious sweet taste. It's very satisfying and is a great bowl of comfort food.
Serves 4
1 tablespoon olive oil
1 large onion
1 butternut squash, peeled and cut into small cubes
2 carrots, peeled and cut into cubes
2 to 3 cloves of garlic, chopped
Couple of sprigs of fresh thyme
1 pint of vegetable or chicken stock
Salt and pepper to taste
Prepare the vegetables and then heat the olive oil in a large non-stick pan.
Add the onions and thyme and cook until soft over a low to medium heat. Then add the butternut squash, carrots and the garlic and cook for a further 5 minutes until the squash starts to soften.
Next add the stock and cover with a lid and leave to simmer gently for 10 minutes. Once the squash is cooked blend together all the ingredients until you have a smooth soup. Season to taste and serve.
