A quick and easy vegetarian meal.
Serves 2
2 portions of medium egg noodles
1 tablespoon vegetable oil
1 large onion, sliced
3 cloves of garlic, chopped
1 inch of fresh ginger, grated
1 handful of brocolli florets, sliced
1 handful of cauliflower florets, sliced
1 or 2 fresh green chillis, deseeded and thinly sliced
2 tablespoons of light soy sauce
1 handful of fresh coriander (cilantro), chopped
Cook the noodles according to packet instructions and leave to one side.
Heat the vegetable oil in a wok, add the onions and stir fry for a minute. Add the chopped garlic, grated ginger and sliced brocolli and cauliflower florets. Stir fry for 2 to 3 minutes.
Add the chopped chilli and stir fry for a minute. Finally add the noodles, the soy sauce and chopped coriander. Stir fry for a minute to mix everything together well.
