The quinticential American breakfast treat gets a low fat makeover.
200ml wholewheat flour
200ml plain flour
3 teaspoons baking powder
pinch of salt
4 tablespoons of sweetener
2 egg whites
200ml rice milk
50ml water
200g blueberries
To make these blueberry muffins, firstly mix all the dry ingredients together. Then add the wet ingredients and stir thoroughly. Finally add the blueberries, mix again and fill individual paper cases about 2/3 full.
Bake in a pre-heated 200 degrees Centigrade oven for 20 to 25 minutes.
