Asparagus with soft boiled egg and balsamic vinegar recipe

A healthy eating idea.

This delicious starter is great in the spring when asparagus is fresh and sweet tasting. If you can, find somewhere to pick your own as once you've tasted this you'll want it again and again.

 

Ingredients List:

Serves 2

A generous handful of asparagus
1 tablespoon of olive oil
Pinch of salt
2 large eggs
Balsamic syrup

Instructions:

Put on a small pan of water to boil to poach the eggs

Toss the asparagus in a bowl with the olive oil and pinch of salt.

Cook the asparagus on a griddle pan. This should take around 5 to 10 minutes. (If you don't have a griddle pan boil or steam the asparagus instead).

Soft poach the eggs in the pan of water. Make sure the yolk doesn't go hard as the pleasure of this dish is to allow the yolk to coat the aparagus.

When everything is cooked, place the asparagus on a plate, drizzle over the balsamic vinegar and top with the soft poached egg.
