Asparagus and Chilli parcels make a fine starter or can be used to accompany main dishes of fish and chicken.
Either cook in the oven or when the weather is good these tasty parcels cook just as well on the barbecue.
Serves 2
400 gram bundle of fresh asparagus - woody stems snapped off 1 large chilli - deseeded and chopped 1 large unwaxed lemon - zest and juice Pinch of fresh lemon thyme 50 grams butter
First you need to make the parcels the asparagus is going to cook in. To do this you need 2 squares of foil and 2 squares of greaseproof paper.
For each parcel you need to place a square of greaseproof paper on top of a foil square and place half your asparagus in the centre. Next sprinkle with half the chilli, half the lemon zest, half the lemon juice and a pinch of lemon thyme. Add a pinch of salt and top with half the butter.
Then bring up the sides of the foil and greaseproof paper to meet in the middle and scruch together to form a sealed parcel.
Cook the parcels in either a preheated oven (200 degrees centigrade) or on a barbecue for 15 to 20 minutes
