Beautiful Barbecues
Healthy Barbecues are possible.
Most of us try to avoid barbecues when thinking about our waistlines. However, aside from the sausages, burgers and steaks, a barbecue is little more than fresh salad and a roll.
So, as long as we avoid the heavily saturated fatty meats and mayonaise we can enjoy a barbecue without worrying about what will happen to our weight.
But what do we eat instead of the meat? Well the best answer is barbecued fish. Salmon and tuna steaks are particularly good for barbecues and taste fantastic. Or why not try a whole fish such as mackeral which has a beautiful taste when barbecued and is full of the good fats. Other great fish for bbq's are sea bass, stuffed with fronds of fennel, and bream, stuffed with lemon.

The recipe instructions talk about grilling the fish, but in both cases placing them on the barbie will cook them just as beautifully.
Another favourite idea is to barbecue thin slices of aubergine and when they are brown, but not burned, take them off the coals and wrap them around a small portion of feta cheese and minced black olives. Secure with a toothpick and serve as finger food.
Sweet corn are also great barbequed and have a wonderfully sweet chargrilled flavour. Choose corn on the cob which have still got the green husky leaves surrounding them and place straight on the barbeque grill. The leaves prevent the corns from burning.
