A low fat Easter Meal suggestion

Plan a low fat Easter celebration

Roast lamb is delicious and makes the perfect basis for a traditional Easter meal.  Choosing a lean cut of lamb is a healthy element of a main meal, however the problem for dieters is how to serve it to make it a healthy option.  Particularly when served with roast potatoes and gravy the calories can soon add up. 

Instead, consider serving a roast joint of lean lamb with boiled new potatoes or jacket potatoes and a light dressing made with plenty of mint or parsley. Making your own mint sauce is really easy.  All you need is a handful of fresh mint, a cup of malt vinegar and a couple of tablespoons of sugar. Heat the vinegar in a saucepan, then add the chopped parsley and sugar. Simmer gently for 10 minutes to infuse the flavour of the mint.  Add water if you find the flavour too strong.  Allow to cool and serve.

You can add even more flavour to your dish by adding a sprinkle of caraway seeds to a side dish of steamed carrots.  Another interesting vegetable combination which goes really well with lamb is to serve steamed brocolli with anchovies and almonds.
